After hand-sorting, the cherries are pulped and fermented in water for a controlled period, allowing natural sugars and mucilage to break down. This stage is critical — too short, and the cup lacks depth; too long, and it risks losing balance. At Liza, this process is carefully monitored to achieve a clean, expressive profile.

The beans are then thoroughly washed and dried slowly on raised beds, turned regularly to ensure even drying and preserve their delicate characteristics. This meticulous approach results in a coffee that is incredibly clean, vibrant, and well-defined.
