Today, we’re diving into a new chapter of innovation—infusing Brazil Santos coffee beans with whisky to create a sensory experience unlike any other.

The Magic of Coffee Roasting

Roasting coffee is a delicate dance between science and art. Each bean carries the story of its origin—its altitude, soil, and climate—and it’s our job to bring that story to life. Brazil Santos, known for its smooth body and nutty sweetness, has always been a cornerstone in our roastery. And the coffee we use in our coffee shop.

Our journey with Brazil Santos starts with our Ailio Bullet R2 roaster, a piece of equipment as precise as it is innovative. We’re able to experiment with variables like drum speed, airflow, and temperature to unlock the full potential of each small batch. Recently, we’ve been testing slower drum speeds during the drying phase, letting the beans breathe and develop their flavour more fully. Each tweak, each adjustment, feels like meeting a new layer of the coffee’s personality.

Whisky Meets Coffee: A Bold Experiment

But what happens when you take a classic like Brazil Santos and pair it with the warm, complex character of whisky? That’s the question that’s been sparking our curiosity. Especially as a coffee drinker by day and whisky drinker by night! Whisky is known for rich notes of caramel, oak, and spice, and we believe these flavours pair perfectly with our house coffee beans.

Our infusion process is an exercise in patience and precision. The beans are carefully exposed to the whisky, vapours, allowing them to absorb its aromatic compounds without compromising their integrity. It’s a fine line to walk—too much exposure, and the coffee risks losing its character; too little, and the infusion falls flat.

We’ve also had to consider how this infusion will interact with the roasting process. Heat transforms both the beans and the whisky’s residual flavors, creating a depth and complexity that’s impossible to replicate in any other way.
