Exploring Honduras Coffee: A Roaster’s Perspective on Flavour, Origin, and Craft
At Acorns Coffee, every new bean we bring in starts with one thing — curiosity.
For me, roasting coffee isn’t just a job or a process; it’s a journey into flavour, science, and craftsmanship. And few coffees have sparked my interest lately quite like those from Honduras.
Why Honduras?
Honduras has been quietly growing some of the most exciting specialty coffees in Central America. The country’s high-altitude farms, fertile volcanic soil, and warm, misty climate create the perfect environment for complex, well-balanced beans. And as a roaster, that’s where the magic begins.
Our latest addition, Honduras Santa Rosa, comes from the lush region of Santa Rosa de Copán, known for its rich soils and dedication to sustainable farming. What drew me to this coffee wasn’t just its origin, but its flavour profile — a beautiful harmony of chocolatey depth, nutty smoothness, and a bright citrus twist that brings the cup to life.
The Science Behind the Roast
One of the things I love most about roasting is the blend of art and science. Every coffee behaves differently in the roaster — some develop fast, others need coaxing to reveal their best flavours. Honduras Santa Rosa, for example, shines with a medium roast that preserves its natural acidity while deepening those comforting chocolate and nut notes.
The roasting process is all about managing heat, airflow, and timing to unlock what’s already inside the bean. It’s not about imposing flavour, but revealing it — and that’s what makes every batch an adventure. I’ve spent hours tweaking profiles, testing brew methods, and (happily) tasting until the balance feels just right.
